Loaded Mac & Cheese

(This fucking recipe is delicious!)



4 cups of pasta 

2 cups of cheese (I used mozzarella and cheddar)

½ cup diced red onion

½ cup of diced Bell pepper

½ cup of diced mushrooms

2 jalapeno, 1 diced & 1 sliced into spirals.

2 cups of diced pancetta or diced bacon

Salt 

Pepper

1 teaspoon of sugar

2 tablespoons of turmeric

1 tablespoon of red chili flakes or chili powder

2 tablespoons of butter/margarine

2 tablespoons of flour 

½ a cup of milk or broth

  1. Bring a medium-sized saucepan full of water to boil, once its roiling add a tablespoon of salt and then the pasta. Bring to a medium-low heat and cook for about 7 mins. 

  2. Once the pasta is done set aside and toss with a little olive oil so it doesn't stick. 

  3. In a medium saute pan add the veggies and that delicious ass pancetta and saute for 2-3 mins before sprinkling some salt and pepper on that shit. Continue cooking for an additional 3 mins before adding to the pasta. If you’re using bacon (which is just as delicious) be sure to cook separately and drain excess fat before adding to the veggie mix.

  4. Now for the cheese! In the same pasta pot, add in 2 tablespoons of butter and simmer until it’s melted. 

  5. Next, add in the flour and use a fork or whisk stir until it almost becomes paste-like and begins to brown. Once that happens add the milk or broth and continue stirring until the paste breaks down and becomes smooth.

  6. You’re not done stirring yet, fold in the cheese in handfuls until it starts to thicken and look creamy AF. At this point, you can also add in the remaining seasonings and stir generously. 

  7. Once it looks like a bomb-ass dip add your pasta mix and coat evenly. 

  8. Plate and top with some fresh parsley or basil (or dried) and boom! Quick and easy mac & cheesy.
