Quick & Easy Ghetto Jambalaya

(It's Creole af!)




What You’ll Need:

1 pound of ground meat

1 can of kidney beans - really, you can use any kind.

1 large yellow onion

1 large green bell pepper

2 cups of white or brown rice


Season With

2 tablespoon of Salt

2 tablespoon of Pepper

1 tablespoon of oregano

1 tablespoon of paprika

1 tablespoon of garlic

1 tablespoon of cumin

1 teaspoon of parsley

1 lemon

½ cup of vegetable broth.

Serves 4-6


  • Bring a medium-sized saucepan and 4 cups of water to boil. Add 1 teaspoon of salt.

  • Add the rice and once boiling again reduce heat to low and cover. Simmer for about 10 minutes until the water has absorbed and the rice is fluffy.

  • While the rice is cooking dice the yellow onion and bell peppers into 1-inch pieces.

  • In a large skillet over medium heat add a teaspoon of vegetable oil and when hot add the ground beef.

  • Season with a pinch of salt and pepper and cook until the meat begins to brown.

  • Next, add the bell peppers and onion to the ground meat and cook until they begin to wilt.

  • By this time your rice should be fully cooked, add it to the ground meat mixture as well.

  • Add in the vegetable broth and the remaining seasonings and bring to boil. Allow the broth to cook down.

  • Once the broth has evaporated cut the lemon into halves and squeeze over the food.

  • Garnish with parsley and voila. Ghetto Jambalaya.
