What You’ll Need:
1 pound of ground meat
1 can of kidney beans - really, you can use any kind.
1 large yellow onion
1 large green bell pepper
2 cups of white or brown rice
Season With
2 tablespoon of Salt
2 tablespoon of Pepper
1 tablespoon of oregano
1 tablespoon of paprika
1 tablespoon of garlic
1 tablespoon of cumin
1 teaspoon of parsley
1 lemon
½ cup of vegetable broth.

Serves 4-6
Bring a medium-sized saucepan and 4 cups of water to boil. Add 1 teaspoon of salt.
Add the rice and once boiling again reduce heat to low and cover. Simmer for about 10 minutes until the water has absorbed and the rice is fluffy.
While the rice is cooking dice the yellow onion and bell peppers into 1-inch pieces.
In a large skillet over medium heat add a teaspoon of vegetable oil and when hot add the ground beef.
Season with a pinch of salt and pepper and cook until the meat begins to brown.
Next, add the bell peppers and onion to the ground meat and cook until they begin to wilt.
By this time your rice should be fully cooked, add it to the ground meat mixture as well.
Add in the vegetable broth and the remaining seasonings and bring to boil. Allow the broth to cook down.
Once the broth has evaporated cut the lemon into halves and squeeze over the food.
Garnish with parsley and voila. Ghetto Jambalaya.
