Loaded Chicken Nachos!




What You’ll Need:

1 pound of diced Chicken Breast

2 diced bell peppers, any color will do

1/2 a red onion diced

1/2 cup of kidney beans

1 tomato, diced (canned works as well)

1/2 cup of corn

2 cups of shredded cheese

Tortilla chips

1/2 cup of water


Season With

1 tablespoon of Sazon (all-purpose seasoning)

2 tablespoon of Salt

2 tablespoon of Pepper

3 tablespoons of Cumin

1 tablespoon of oregano

1 tablespoon of Garlic


  1. Start by mixing all of your seasonings until they are well blended. Set aside for the end.

  2. Heat a large saute pan over medium-high heat until that sh*t gets hot. Then add two tablespoons of oil and reduce to medium. Don't let the oil burn.

  3. Add the chicken to the pan and cook for 2-3 minutes, stirring, making sure to brown all sides. Nobody wants uncooked ass chicken.

  4. After the chicken is browned, add in the onions and peppers and cook until them bad boys are soft. 3-4 minutes.

  5. Last, add in your beans, corn, tomato, and a half cup of water. Bring to a boil and stir in your seasonings. Once boiling reduce to a simmer and cook until the water has reduced by 70%, or almost gone. about 6-7 minutes.

  6. The only thing left is to plate and serve. Layer your tortilla chips evenly on a plate or bowl and add half of the shredded cheese.

  7. Spoon your nacho mix over the cheese and chips and add more shredded cheese to the top and boom you're ready to eat.

  8. Optionally, throw some sour cream, avocado, and salsa on top to really take it to the next level.
