It’s cold AF outside, let’s make “Kick-Ass Chili”!

What You Need:

1lb of ground beef

1 cup of kidney beans (Canned beans work just fine)

1 cup of black beans (Canned beans work just fine)

1 cup of corn

1 large white onion - diced

2 large tomatoes diced

2 cups of Beef Stock or Broth

1 cup of Water

3 Tablespoon Salt

3 Tablespoon Pepper

2 Tablespoon Garlic

1 Tablespoon of Cumin

4 Tablespoon of Chili Powder

1 Teaspoon of hot sauce

  1. Set the stage by heating a frying pan over medium-high heat until hot, once hot (but not smoking) add a tablespoon of cooking oil, and add the ground beef. Reduce the heat to medium.

  2. Season the beef with a tablespoon of salt and pepper and cook, stirring, until brown.

  3. Next, add the onions to that shit and mix them in well, make sure they can touch the pan so they can cook evenly. Cook until they begin to soften.

  4. Once soft, transfer the beef mixture into a large pot over high heat.

  5. In the pot, add your beans, corn, stock, water, and the remainder of your seasonings and bring to a boil. Use a large spoon to mix it well so the seasonings can blend together.

  6. After that shit begins to boil, reduce the heat to a simmer, and cook for 5 mins. At that 5 minute mark, you can add your tomatoes, stir, and return to a simmer.

  7. Cook an additional 5 -7 minutes or until the liquids reduce to about half.

  8. Be sure to taste and season during this process to make sure your flavors are balanced. (I like to add extra dabs of hot sauce).

  9. Boom, you're done. Serve with rice, cornbread, or some good ol’ saltine crackers.
