1 tablespoon of butter
What That Taste Like?
Fresh Summer Vibes
Slice the avocado down the middle, remove the pit and add into a medium-sized bowl.
Add your garlic, pepper flakes, lemon juice, and 1 teaspoon of salt and pepper and mix until well blended and creamy.
Set aside and pop your toast in the toaster (or oven, or air fryer for extra crispy toast).
At the same time, melt a tablespoon of butter in a large frying pan and gently crack each egg into the pan.
Cook the eggs until the egg white begins to firm and becomes white (about 2 min) and then flip gently trying not to break the egg yolk. Cook for 1 min before removing from the pan.
Now we assemble. Plate your toast and spread a layer of the avocado mixture.
Add a handful of the arugula on top of the avocado mixture and then a slice of the smoked salmon.
Last, add the fried egg to the top and sprinkle with the remaining teaspoons of salt and pepper and dig in!
