Green Goddess Avocado Toast

(Basic, but f*cking delicious)

If you're in the mood for a rich and fulfilling breakfast but also trying to maintain that "summer body" then you need to make this Avocado toast recipe asap. It's simple and somewhat basic, but it's packed with healthy fat, peppery greens, and whole grains which are all good for you. Start your day off right (bonus, it only takes about 10 minutes to make)!

What You’ll Need:

1 large Avocado

2 cups of Arugula

4 slices of Whole-Grain or Whole-Wheat toast

4 medium-sized eggs

4 slices of Smoked Salmon

1/4 cup of Lemon Juice

2 teaspoons of Salt

2 teaspoons of Pepper

1 teaspoon of Garlic

1 teaspoon of chili flakes Red Pepper Chili Flakes

1 tablespoon of butter

What That Taste Like?

Fresh Summer Vibes

  1. Slice the avocado down the middle, remove the pit and add into a medium-sized bowl.

  2. Add your garlic, pepper flakes, lemon juice, and 1 teaspoon of salt and pepper and mix until well blended and creamy.

  3. Set aside and pop your toast in the toaster (or oven, or air fryer for extra crispy toast).

  4. At the same time, melt a tablespoon of butter in a large frying pan and gently crack each egg into the pan.

  5. Cook the eggs until the egg white begins to firm and becomes white (about 2 min) and then flip gently trying not to break the egg yolk. Cook for 1 min before removing from the pan.

  6. Now we assemble. Plate your toast and spread a layer of the avocado mixture.

  7. Add a handful of the arugula on top of the avocado mixture and then a slice of the smoked salmon.

  8. Last, add the fried egg to the top and sprinkle with the remaining teaspoons of salt and pepper and dig in!
