(With Some Pasta)
What You’ll Need:
2 lb chicken breast
1 Red Bell Pepper
1 Green Bell Pepper
1 Red Onion
2-3 Mushroom Bulbs
8 Slices of Swiss Cheese
1 Jar of Pesto Sauce
Sliced or Loaf of dough, or any kind of sliced bread.
4 cups of Orzo Pasta
Season With
½ tablespoon of Salt
½ tablespoon of Pepper
1 Tablespoon of Lemon Juice
1 teaspoon of olive oil - Truffle oil if you want to be fancy (It’s so deliciously good)
Grab your chicken breast and slice it in half, we want about an inch thick. Season both sides with salt and pepper.
Next slice all the veggies, lengthwise, to about half an inch (just make ‘em skinny).
Now, boil 3 Qts of water in a saucepan and heat your grill/panini pan over medium/high with a tablespoon of olive oil. Heat for about 5 minutes until hot. (Yes, you can use any old skillet.)
Once the skillet is hot add in chicken breast, laying them flat, and reduce the heat to medium/low and cook until both sides are lightly browned.
Add the mix of veggies to a corner of the pan and cook them until they soften. About 5 minutes.
Once your water is boiling salt it heavily, about 2 teaspoons.
Add the Orzo pasta and reduce heat to medium. Boil for about 8-10 minutes or until al dente.
Once the chicken and veggies are done remove them from the pan and set them aside covered.
Re-oil your pan and reduce the heat to low.
Take your bread and a spoon full of the pesto sauce. Lather both sides generously.
Add the sliced cheese to one top layer and a chicken breast to the bottom layer.
Grab a handful of veggies and scatter them on top of the chicken breast and put both layers together.
Add them to the pan and cook for an additional 2 minutes on each side.
The pasta should be done by now. Drain the water and add it back to the saucepan.
Toss the pasta in some olive oil and season with salt and pepper and lemon juice.
Add a tablespoon of pesto sauce and stir until it’s evenly coated. I like to add a little granulated garlic as well. Love me some garlic.
Now that everything is done all there is left to do is plate it and enjoy.
