Chicken & Root Vegetable Gratin

(It's So Damn Yummy)



1 large chicken breast (sliced or diced)

1 turnip

1 large carrot

1 large red potato

1 large beet

½ Red onion sliced


2 cups of parmesan cheese

½ cup of milk or cream - you can use silk

3 tablespoons of butter or margarine

Parsley for garnish

2 tablespoons of olive oil.


1 teaspoon of Salt

1 tablespoon of Pepper

1 tablespoon of Garlic

1 tablespoon of Cajun Spices (paprika, cayenne, celery salt, black pepper).



Cook time is about 45 mins total.

  • Preheat your oven to 425 degrees Fahrenheit.

  • While that’s heating, slice all your veggies about ½ inch thick and add to a mixing bowl, except the onion. Add your sliced or diced chicken breast as well.

  • Mix in all your seasonings and toss with the olive oil to coat evenly.

  • Add your chicken and veggie mix to a medium-sized round skillet or baking dish (cast iron is probably best) and place it on the top rack of the oven. Cook for 30 mins.

  • At the 30 min mark, add the dairy products (cream, cheese, and butter) and onions to the veggie mix and stir to mix. Save some of the cheese for the top.

  • Cook an additional 15 minutes until the cheese is melted and most of the cream has evaporated.

  • Top with Parsley for garnish.
